  • 1 finely chopped medium onion 
  • 1 Asian pear peeled and cut into 1” pieces (substitute ordinary pear or apple if unavailable)
  • 5 peeled and halved garlic cloves 
  • 1 tablespoon Korean Chilli Paste (Gochujang Paste)
  • 1 thumb-sized piece of fresh ginger, peeled & cut into 1″ pieces
  • 1 cup dark soy sauce
  • 1/2 cup water
  • 1/4 cup light brown sugar
  • 2 tablespoons or mirim (Korean sweet rice wine – Japanese mirin if unavailable)
  • 1 tablespoon (6g) freshly ground black pepper
  • 4 thinly sliced scallions
  • 2 tablespoons sesame oil
  • 2 tablespoons lightly crushed toasted sesame seeds
  • 3 pounds of flanken-style beef short ribs, (get your butcher to cut across the bones lengthwise for this Korean style cut) roughly 1/2″ thick

Place all ingredients in a large ziplock bag, and place in the fridge for at least 4 hours, and preferably overnight.

Recipe for Korean BBQ Short Ribs – Ingredients

  • Get your pellet grill up to a high heat – around 450F – brush grills with sesame oil
  • Remove ribs from marinade and pat dry – keep marinade to brush ribs later
  • Put the ribs on the hot grills 4-5 minutes a side (roughly 10 minutes overall cook time)
  • Pour half the marinade over the top of the ribs and brush to coat
  • Turn the ribs over, pour the rest of the marinade over the top and brush to coat
  • Moving the ribs quickly now check for colour – they should be golden brown
  • Brush with Korean BBQ Sauce if desired

Recipe for Korean BBQ Sauce

  •  3/4 cup light soy sauce
  •  1/4 cup of water
  •  1 cup of brown sugar
  •  1/4 cup Mirim – Korean sweet rice wine (substitute Japanese sweet rice wine or Chinese rice wine)
  •  2 tablespoons of sesame oil
  •  1 tablespoon of rice wine vinegar
  •  1/4 teaspoon freshly ground black pepper
  •  1/2 teaspoon chilli flakes
  •  2 teaspoons of sriracha sauce
  •  1 tablespoon of ginger peeled & grated
  •  1 1/2 tablespoons of garlic peeled & grated
  •  1 finely chopped spring onion/scallion
  •  3 tablespoons of cornstarch & 3 tablespoons of water (cornstarch/cornflour slurry)

Combine all ingredients (except the cornstarch and water slurry) in a hot pan and bring to the boil. Simmer for 10-15 minutes or so and then add the cornflour/cornstarch slurry at the end to thicken the Korean BBQ sauce.

Korean BBQ Short Ribs on the Smoker

If you want to smoke your Korean BBQ short ribs you will need to use the 321 method for ribs.

321 Method for Smoked Korean BBQ Ribs

  • Smoke at 225F on the smoker grills for 3 hours unwrapped
  • Wrap in foil or butcher’s paper & smoke for another 2 hours
  • Remove wrap, then cover in Korean BBQ sauce & smoke for final hour

Korean BBQ Short Ribs in the Slow Cooker

  • Although we always prefer to grill or smoke ribs, for slow cooking place marinated ribs in slow cooker/crock pot
  • Add the Korean BBQ Sauce in to the slow cooker
  • Cook on medium for 6-8 hours
  • Serve with Korean sticky rice or noodles
