Easy Pico De Gallo Recipe

Pico De Gallo INGREDIENTS

  • 1 cup of finely chopped small white onion
  • 1 medium finely chopped jalapeño – deseed to reduce heat, or leave in if you like heat
  • ¼ cup of freshly squeezed lime juice
  • ¾ teaspoon of fine sea salt or to taste
  • 1 and ½ pounds (8 small tomatoes or 4 larger ones) finely chopped red tomatoes
  • ½ cup of finely chopped fresh coriander/cilantro

Method

Combine all the ingredients in a bowl and mix to combine.

Taste to check for seasoning. If you need more salt, add it now.

Optional – freshly cracked black pepper or a little olive oil. You can also substitute white onion with red onion.

For best results rest the Pico De Gallo to let the flavours combine – at least for a few hours, but preferably overnight in the fridge.
