If you are a fan of Buffalo chicken you’re going to love this boneless chicken wings recipe with Buffalo Hot Sauce.
Boneless chicken ‘wings’ are taken from the breast of the chicken or sometimes a mix of breast and wing meat. Unlike the chicken wings cut which contains bone, cartilage as well as more moisture, these ‘wings’ just contain meat.
They are usually coated in flour and seasonings and deep fried.
Boneless Chicken Wings Recipe with Homemade Buffalo Sauce
Ingredients for Boneless Chicken Wings
- 2 chicken breasts cut into 3 inch chunks (8cm)
- 1 cup of plain flour (use cornflour if you like a lighter batter)
- 1 beaten egg
- BBQ seasonings of choice – we like Meat Church Holy Gospel Rub (see recipe notes to make your own)
- Enough oil to cover the chicken pieces – neutral oils such as Canola, Avocado or Peanut Oil are great here
- Optional – add a pinch of turmeric to the flour for a little extra flavour and colour
Ingredients for Buffalo Hot Sauce
- 8 tablespoons of Butter
- ½ cup or 8 tablespoons of Tabasco Sauce (you can also substitute Frank’s Hot Sauce or Louisiana Hot Sauce) or to taste if you like it milder
- 1 teaspoon Smoked Paprika
- ½ teaspoon Garlic Powder
- 1/2 Teaspoon Chilli Powder (we like Extra Hot Chilli Powder but to taste)
- 2 tablespoons Apple Cider Vinegar
- 1 teaspoon Worcester Sauce
- Salt and pepper to taste
Boneless Chicken Wings Method
- Get your deep fat fryer up to a temperature of around 170C or 338F
- Put the flour in a bowl and season it with your BBQ rub (add the turmeric if using)
- Dip each chicken piece in the seasoned flour then into the egg mixture and then return the chicken to the flour again
- Carefully place each chicken piece into the deep fat fryer – you may need to fry them in batches depending on the size of your fryer
- The chicken is ready when a golden brown coating has formed and the internal temperature is 74C or 165F
Buffalo Hot Sauce Method
- Melt the butter in a pan and add your hot sauce of choice
- When the butter has melted add the rest of the ingredients and stir to combine
- Take the sauce off the heat when it has reduced slightly and the ingredients are mixed together
- Serve the sauce either over the chicken pieces or as a dipping sauce on the side
- Optional – sprinkle with sesame seeds or chopped scallions
Boneless Chicken Wings in the Air Fryer
If you don’t want to deep fry your boneless chicken wings the Air Fryer is a great alternative. It’s definitely a healthier option, using much less oil which cuts down on calories and expenditure.
Simply place your boneless wings in the air fryer spray with a little and cook for 10-15 minutes at 200C or 392F. To get even cooking turn the pieces over halfway through and respray with a little oil.

- 1 tablespoon fine sea salt
- 1 tablespoon freshly ground black pepper
- 1 tablespoon chilli powder
- 1 tablespoon smoked paprika
- 2 teaspoons garlic powder
- 1/2 teaspoon dried oregano
- 4 tablespoons brown sugar
- 2 teaspoons onion powder
Nashville Hot Sauce for Chicken Wings
For a great alternative to Buffalo Hot Sauce try this Nashville Hot Sauce Recipe:
- 1/2 cup of butter
- 3 tablespoons of cayenne pepper more or less depending on heat preference
- 2 tablespoons of brown sugar
- 2 teaspoons of coarse salt
- 2 teaspoons of freshly ground black pepper
- 2 teaspoons of garlic powder
- 1 teaspoon of sweet smoked paprika
- Optional – If you like it extra sweet add 1 tablespoon of honey
