Doing them slow and low in the smoker takes the flavours to the next level. If you want to save time you can of course simply raise the temperature of your BBQ smoker, but in our opinion that smoky taste is just too good to lose.

Buffalo Sauce Ingredients
- 8 tablespoons of Butter
- ½ cup or 8 tablespoons of Tabasco Sauce (you can also substitute Frank’s Hot Sauce or Louisiana Hot Sauce) or to taste if you like it milder
- 1 teaspoon Smoked Paprika
- ½ teaspoon Garlic Powder
- 1/2 Teaspoon Chilli Powder (we like Extra Hot Chilli Powder but to taste)
- 2 tablespoons Apple Cider Vinegar
- 1 teaspoon Worcester Sauce
- Salt and pepper to taste
Sauce for Buffalo Wings Recipe Step 1 – Prepare the Sauce
You can make this on a hob in the pan quickly and easily.
Put the pan on a medium heat and add the butter.
As the butter begins to melt you can add the rest of the ingredients and stir them together.
After a few minutes the butter will melt into the sauce, and the spices will dissolve into a delicious, buttery, fiery hot sauce.
Remove the sauce from the heat and leave to cool.
We are going to use some of the Buffalo Hot sauce as a marinade, some to brush the chicken wings with during the smoke, but we are going to keep most of the sauce to pour over the chicken at the end.
Sauce for Buffalo Wings Recipe Step 2 – Marinate the Chicken in the Sauce
Leave the chicken wings in a small amount of the Buffalo sauce for around 10 minutes while you get your smoker up to 250°F or 121°C.
This will help to get some initial flavour into the meat.
If you want extra crispy chicken wings rub them with cornstarch (cornflour in the UK).
The sauce will also help the flour stick to the wings.
Sauce for Buffalo Wings Recipe Step 3 – Smoke the Buffalo Wings
Once you are happy that your smoker is up to temperature, add the chicken wings to the grills.
Be careful not to put them near open flames. We want to smoke them slowly, not to burn them quickly.
At 250°F it will take between 2 – 2 1/2 hours to smoke your chicken wings. Never leave it to chance and timings because it will be different on every occasion.
Use an internal meat thermometer to check that your chicken is fully cooked. It should be 160-165°F in the the thickest part of the wings.
Brush the wings with Buffalo Sauce about halfway through the cooking.
You may also need to refuel after an hour or so.
We like to use a mild fruit wood such as cherry or apple for smoking chicken, but hickory works well too and produces a stronger smokier taste.
Sauce for Buffalo Wings Recipe Step 4 – Pour Over the Sauce & Serve
When you are happy with the internal temperature of the chicken wings, take them off the grills and leave them to rest for 5-10 minutes.
Garnish your wings with finely chopped spring/green onions or sesame seeds.
Serve to the rapturous acclaim and applause of your guests.
