When the cooler evenings start to drift in you might find yourself craving smoker casserole recipes for cosy weeknight meals.

There are plenty of great options for smoked casseroles and you can cook them easily in your smoker to really enhance the flavour of your casserole. You can leave the casserole in your smoker to cook low and slow for a while or you can make it in the oven first and finish it off quickly in the smoker. It’s up to you!

Casseroles are a great way to use up leftovers, especially if you have been smoking meat over the weekend and aren’t sure what to do with it.

Smoked Cheesy Potato Casserole

This is a really easy but tasty smoked casserole recipe. You can use it as a side dish too but with bacon, onions, potatoes, and cheese it makes for a pretty filling main casserole dish.

Once you have parboiled the potatoes, and fried off the bacon and onions it’s a simple matter of adding them and your cheeses of choice to a cast iron pan, and then smoking the casserole in your smoker at 225F or 107C for 3-4 hours.

You can use your own favourite BBQ dry rub or make the homemade one below:

  • 2 teaspoons of onion powder
  • 1/2 teaspoon of dried oregano
  • 1 tablespoon finely ground sea salt
  • 1 tablespoon of black pepper
  • 1 tablespoon of smoked paprika
  • 1 tablespoon of chilli powder
  • 2 teaspoons of garlic powder
  • 4 tablespoons brown sugar

Smoked Brisket Shepherd’s Pie

This is an absolutely great way to use up leftover smoked brisket for a perfect cozy, hearty dinner. Shepherd’s Pie traditionally uses lamb mince but smoked brisket is much more flavoursome after all those hours in the smoker.

For this recipe you will need:

  • 1 pound cubed Smoked Brisket 
  • 1 can of sweetcorn
  • 3 pounds of Yukon Potatoes (or other golden potatoes)
  • 8 Ounces of Creamed Cheese
  • 1 Tbsp Salt
  • 2 Tsp of Black Pepper
  • 3/4 Cup of Coconut Milk
  • 4 Ounces melted Butter 
  • 1/2 Cup Smoked Gouda shredded

This is one of our favourite easy smoker recipes and it comes together in no time. You peel and boil the potatoes until they’re soft. Make the topping by adding cream cheese, butter and coconut milk to the potatoes and mash.

Traeger Smoker Casserole Recipes

Bacon Green Bean Casserole

This classic smoked casserole dish comes from Traeger themselves, and it only takes 45 minutes or so to smoke in your smoker at 350F or 177C.

You’ll need the following ingredients:

  • 1 1/2 pounds green beans, trimmed and blanched
  • 1  can of cream of mushroom soup
  • 1/2 cup of milk
  • 1/2  tsp of Worcestershire sauce
  • 1/2 tsp of freshly cracked black pepper
  • 1 1/3 cup of French fried onions – half to cook within casserole and half to top the casserole at the end
  • 1/4 Cup red bell pepper, finely diced
  • 8 sieces cooked sliced bacon crumbled – half to cook with casserole and half to top at the end

You simply assemble all of the ingredients in a cast iron pan, keeping half of the bacon and the onions back to top at the end of cooking. Place in your smoker for 35 minutes until bubbling, and then top with the remaining bacon and onions and smoke for another 5-10 minutes until crispy.

Smoked Mac and Cheese

Mac and cheese is ultimate comfort food and when you smoke it in your pellet grill it takes the flavours up a level.

This recipes involves making a bechamel sauce as a base, and then adding 3 different types of cheeses and cooked pasta to your casserole dish.

You make the bechamel sauce by heating equal amounts of flour and butter in a pan until incorporated, and then adding in some milk and heavy cream and seasoning with paprika, onion powder, salt and pepper.

You smoke the mac and cheese for an hour for a milder smoke flavour or up to 2 hours if you want a stronger smoke flavour.

Traeger Smoked Cowboy Stew Texas Style

This smoker casserole recipe is sure to please and really delivers on flavours. You’ll need the following ingredients:

  • 1 Tablespoon of Olive Oil
  • 1 Diced Yellow Onion
  • 1 Finely Chopped Bell Pepper,
  • 2 pounds of Ground Beef (Mince)
  • 1 pound of Chopped Smoked Sausage
  • 1 1/2 pounds parboiled & quartered Baby Gold Potatoes
  • 2 cans of drained and rinsed Pinto Beans
  • 2 cans Diced Tomatoes with Green Chillies
  • 1 can of Stewed Tomatoes
  • 10 oz bag of Frozen Mixed Vegetables
  • 2 packets of Taco Seasoning
  • 3-4 cups Chicken Broth (Stock) or Water

You start by heating a Dutch Oven or cast iron pan on the hob and frying off the onion, pepper sausage and ground beef. When they are just cooked add the rest of the ingredients to the casserole dish.

Smoke the cowboy stew in the smoker for 3-4 hours at 325F or 163C stirring occasionally.

Traeger Hashbrown Casserole

For another great smoked casserole dinner have a look at this Traeger Hashbrown Casserole. It’s easy to make, quickly assembled and perfect for a hearty dinner.

You will need:

  • 1 1/2 cups of milk
  • 1 teaspoon of sodium citrate
  • 1 20-ounce bag of grated potatoes
  • 1 20-ounce bag of cubed potatoes
  • 6 cups of shredded cheddar cheese
  • 1 cup of sour cream
  • 2 tablespoons of your favourite ranch dressing
  • 1/4 cup of butter
  • 2 cups of chopped, cooked crispy bacon

Method

  • Preheat your pellet grill or smoker to 225°F or 107°C.
  • In a medium hot saucepan, heat the milk over medium until simmering. Stir in sodium citrate until dissolved and then remove pan from heat. 
  • Slowly stir in 4 cups of grated cheese of choice.
  • Mix the cheese sauce, sour cream, and your favourite ranch dressing mix together until well-combined. Stir in the potatoes until they are evenly coated.
  • Grease a Dutch oven or cast iron skillet with butter, and then spoon the potato mixture into the greased pan. Place the remaining butter on top of the potatoes and then top with the remaining 2 cups of grated cheese and crispy chopped bacon.
  • Smoke in your pellet smoker for 45 minutes to an hour, or until you have tender potatoes and the cheese has melted.

Pit Boss Smoker Casserole Recipes

Cook these casseroles in your Pit Boss pellet grill, or whatever smoker you have.

Breakfast Smoked Casserole Recipe

This casserole recipe is perfect for a delicious hearty breakfast. You’ll need the following ingredients:

  • 1 pound of chorizo sausage
  • 1 1/2 cups red potatoes cooked and chopped into chunks
  • 1 sliced onion
  • 1 sliced sweet pepper 
  • 12 beaten eggs
  • 1 cup shredded cheddar cheese

Fry off the onions, peppers and chorizo in a cast iron skillet, and then add in the potatoes, eggs and sprinkle with cheese.

Smoke the casserole in your smoker for around 1 hour at 225F or 107C. This quick smoker recipe is done when the eggs have set in the dish.
