Fish doesn’t take anywhere near as long to smoke as meat, and cod is an easy and fun fish to smoke.

Smoking Cod Recipes 1 – Classic Smoked Cod with Cherry Wood

This easy smoker recipe involves dry brining the cod for an hour in a mixture of salt and sugar, and then smoking the fish slow and low at 225°F for around an hour.

The target internal temperature is 145°F.

All you need for it is 2 cod fillets, salt, pepper, olive oil, sugar and lemon juice to serve.

Super simple but absolutely delicious!

Smoked Cod Recipes 2 – Fish Tacos

This recipe also calls for smoking at 225°F for around an hour, but it has a really good (although slightly unusual) marinade.

The goal is to eventually make tacos with that tasty, flaky smoked cod, adding coleslaw, sour cream and fresh lime juice.

Marinade 

  • 2 tablespoons of honey
  • 1/2 cup Light Soy Sauce
  • 1 tablespoon of Sriracha Chilli Garlic Sauce
  • 2 cups of Diet 7 Up or Sprite
  • 1 Tablespoon Fresh Ginger Paste

Cod in the Smoker Recipes 3 – South Indian Style Cod Curry

Once you have smoked your cod at 225°F over apple or cherry wood, you will be ready to add it to a really tasty South Indian curry.

You first of all make a paste by blending the following ingredients in the food processor:

For the Curry Paste

1 chopped small tomato

1 chopped small onion

80g fresh or frozen coconut

9 dried Kashmiri chillies

6 peeled cloves of garlic

1 1/2 teaspoons of salt

1 tablespoon of black pepper

Then you add the oil, spices and paste to a medium hot pan to fry off for a few minutes.

Next you add the smoked cod to the curry.

Finally you add the curry leaves and cilantro/coriander.

For the Cod Curry:

1 teaspoon black mustard seeds

1 teaspoon of husked urid dal

2 teaspoons of turmeric

150ml water

600g smoked cod fillet

50 ml vegetable oil

Fresh curry leaves

Fresh chopped cilantro/coriander leaves

Served with basmati rice and chapatis. Delicious!

Smoking Cod Recipes 4 – Cod Kedgeree

Kedgeree has its origins in India but the British have adapted it over the years, often serving it at breakfast time.

It is traditionally served with smoked haddock, but smoked cod is just as delicious.

Once you have smoked the cod for an hour or so on the smoker grills, you can make this delicious spicy dish with rice and eggs.

Ingredients Smoked Cod Kedgeree

  • 2 teaspoons of ghee or olive oil 
  • 2 large eggs
  • 2 cups of white rice
  • 4 cups of boiling water
  • 2 tablespoons of butter
  • 1/2 teaspoons of apple cider vinegar
  • 1 1/2 teaspoons coarse salt
  • 1 lb smoked cod fillet
  • 2 teaspoons of mustard seeds
  • 1 tablespoon of fresh cilantro/coriander
  • 2 teaspoons of curry powder
  • 1 teaspoon finely chopped garlic
  • 1 1/4 cups of milk
  • black pepper to taste
  • 3/4 cup of chopped onions
  • 2 cups of peas
  • 1 finely chopped red chilli

Smoke Cod Recipes 5 – Cod Fishcakes

This is a really tasty way to enjoy smoked cod and very easy to do as well.

You mix the smoked cod with 1 beaten egg, mashed potatoes, cheese, mustard and chives.

You roll and separate the mixture into 6 equal sized balls and leave them to firm up for a while in the fridge.

When they are firm you cover them with flour, dip them in beaten egg and then roll them in breadcrumbs.

They only take around 10 minutes to cook in a medium hot pan!

200g mashed potatoes

50g grated cheddar

50g seasoned flour

100g breadcrumbs

2 tablespoons of Creme Fraiche

2 teaspoons of wholegrain mustard

3 tablespoons of chopped chives

At 225°F it will take around 1 hour to smoke an average-sized fillet. Never guess with timings, always make sure you go by internal temperature which is 160°F for fish.
