What is Tri Tip Steak?

The tri tip steak cut comes from the bottom sirloin, which is located in the hindquarters of the animal, near the leg and rump.

It has a triangular shape, and goes by a number of different names including ‘Triangle Steak,’ ‘Newport Steak,’ ‘Santa Maria Steak,’ ‘Poor Man’s Brisket,’ and the ‘California Cut.’

Ingredients

  • Sliced Smoked Tri Tip Steak
  • Rocket
  • Parmesan
  • Toasted Brioche Baps (or Ciabatta Rolls)
  • Your favourite BBQ Sauce
  • Pickled Onions (substitute caramelised onion chutney)
  • Dijon Mustard
  • Salt and Pepper to Taste

Tri Tip Sandwich Method

  • Butter 2 toasted brioche baps (or ciabatta rolls)
  • Place the rocket on top of them both
  • Add chopped pickled onions (or some caramelised onion chutney)
  • Place 1 thick slice (or 2 thin slices) of smoked tri tip steak (hot or cold) on top of each bap
  • Add Parmesan cheese and BBQ sauce
  • Season to your liking with salt and pepper
  • Brush the top of the buns with Dijon Mustard and add to each sandwich

Something about the tangy heat of the mustard, the vinegary sweetness of the pickled onions, the sweetness of the BBQ sauce, the pepperiness of the rocket, and the saltiness of the Parmesan works really well with the bold flavours of smoked steak!

Variations for Tri Tip Sandwiches

For those who enjoy a bit of heat and zing, a dollop of horseradish sauce or aioli can provide the perfect kick. We like mustard for this, although horseradish sauce is a good (although hotter) alternative.

You could also try your favourite hot sauce, such as Frank’s Red Hot Sauce.

You should feel free to experiment with different cheeses, such as sharp cheddar or creamy blue cheese (tone down the salt if you use this delicious salty cheese), a variety of pickled vegetables or possibly roasted peppers.
