Vegetarian Smoker Recipes For Your Pellet Grills

Smoker Recipes for Vegetarians
BBQ Smoked Jackfruit – An Easy Vegetarian Smoker Recipe
This is a really easy and quick vegetarian or vegan smoker recipe with just a handful of ingredients. All you need is 2 tins of jackfruit, your favourite BBQ sauce and your BBQ seasoning of choice. It’s a very tasty alternative to pulled pork that even carnivores might love!
Smoke the jackfruit for 1 1/2 hours altogether at 250F or 121C over apple wood. Treat it as you would pulled pork – put it in buns with coleslaw or eat as is with pickles and coleslaw.
If you are a vegan make sure your BBQ sauce and dry rub don’t contain any meat or dairy extracts – egg extract is particularly common in condiments.
Smoked Butternut Squash Recipe
Big vegetables like squash are perfect for cutting into ‘steaks,’ and being treated like a piece of meat in the smoker. You can smoke a butternut squash steak in its skin by cutting it in two, dusting it with your favourite BBQ rub, and optionally cutting a crisscross pattern into it to take on more smoke.
In terms of choice of wood for smoking vegetables, go with hickory for a bolder smoke flavour or fruit woods such as apple or cherry for a milder smoke taste. You could also go in with a mix of hickory and a fruit wood if you want the best of both worlds.
Serve this as a vegetable main along with sides, or blitz it up with some stock for a delicious smoked butternut squash soup.
As long as your favourite BBQ seasoning doesn’t contain any animal products then this is 100% vegan too. If you want to be sure make your own rub using the following ingredients:
- 3/4 cup brown sugar
- 2 tablespoons coarse salt
- 1 tablespoon smoked chipotle chilli powder
- 1 tablespoon of sweet smoked paprika
- 1 tablespoon of garlic powder
- 2 teaspoons of ground cumin
- 1/2 teaspoon of cayenne pepper
- 1/2 teaspoon dried oregano
- 1/2 teaspoon of ground cinnamon
Simply place all the ingredients in a small bowl and mix to combine.
It will only take around an hour to cook butternut squash in the smoker, cooking low and slow at 225F or 107C. You can watch a video of the process on our Instagram video below.
Smoked Eggplant (Aubergine) Steak Recipe
Similar to a butternut squash eggplant (aubergine) is one of the best smoker recipes for vegetarians due to its size and shape.
Treat this delicious vegetable the same way as the squash – cut in two for 2 steaks, dust liberally with BBQ rub and smoke in the smoker for around an hour at 225F 0r 107C.
Serve with fries, mash, roast potatoes, salad or rice.
Traeger Smoker Vegetarian Recipes
This smoker recipes for vegetarians are either from Traeger themselves or can be smoked on your Traeger pellet grills (or whatever grill you have).
Smoked Beer-Can Cabbage
You’ve probably heard of Beer-Can Chicken, but you can treat a head of cabbage in the same way for a great vegetarian or vegan smoker recipe.
It’s simple matter of hollowing out the cabbage head at the bottom so you can rest it on top of your half empty beer can of choice (keep the cut out cabbage pieces for coleslaw later). From there you cover the cabbage in your favourite BBQ seasonings and smoke it in your smoker at 225F or 107C for about an hour.
Baste it with a little BBQ sauce every 15 minutes or so to stop it drying out, then you can treat it like a piece of pulled pork by cutting it into slices and serving it in sandwiches or by itself as your main dish.
Smoked Cauliflower Roast
When cauliflower is cooked properly it takes on a unique, fantastically crispy texture making it perfect to smoke or roast.
You simply parboil the cauliflower in vegetable stock, place it in a skillet or cast iron pan, cover it in a delicious sauce and smoke for around an hour at 350F or 177C.
For the sauce:
- 3 tbsps of olive oil
- 1 tbsps of soy sauce
- 1 tbsp of maple syrup
- 1 tbsp of tomato paste
- 1 tsp of Dijon mustard
- 2 tsp of smoked paprika
- 1 tsp of ground cumin
- 1 tsp of garlic powder
- ½ tsp of onion powder
- 1 tsp of mushroom seasoning
- ¼ tsp of black pepper
Combine these ingredients in a bowl and mix thoroughly before coating your whole cauliflower head in it.
