Remember that if your butcher has not already done so you will need to remove the membrane from the back of any bone in ribs (this is not necessary for country style ribs). The membrane is not particularly edible and it makes it harder for the ribs to take on smoke flavour.

3-2-1 Ribs Z Grill Recipe For Baby Back Ribs

If you aren’t familiar with the 3-2-1 method for smoking pork ribs it involves smoking the ribs directly on the pellet grills for 3 hours, then wrapping the ribs in foil with liquid (e.g. butter syrup etc) and steaming them in the smoker for 2 hours, then finally smoking the ribs unwrapped for 1 hour.

BBQ Rub Ingredients

  • 1/2  cup  Roasted Chipotle Garlic seasoning
  • 1/2  cup  Maple Bacon seasoning
  • 1/2  cup  Bourbon Molasses seasoning

Mix together in a bowl until completely combined. Season the ribs liberally all over with the seasoning before smoking.

Method

  • Fill the hopper with hickory wood pellets and get your pellet grill up to 225F or 107C
  • Rub your pork ribs with yellow mustard and then dust them all over with the BBQ rub
  • Smoke meat side up for 3 hours
  • Wrap your ribs in foil adding brown sugar, butter, honey, and apple juice to the foil and smoke for another 2 hours
  • Remove the foil and smoke the ribs for a final hour after brushing them with your favourite BBQ sauce
  • Rest for 5-10 minutes and then serve

Z Grill Country Style Pork Ribs

These delicious country style pork ribs are marinated in a sweet maple cinnamon sauce in the fridge for 12 hours or so and then smoked in your pellet grill for around 4 hours.

If you are familiar with country style ‘ribs,’ they are different from regular ribs as they are usually boneless and come from the shoulder of the pig not the ribcage. They are actually quite similar to pork shoulder steaks.

Ingredients

  • 2 lbs of Country Style Pork Ribs
  • 6 tbsps your favourite Maple syrup
  • 1 tsp Ground Cinnamon
  • 2 tsps Onion Powder
  • 3 tsps Garlic Powder
  • 4 tsps Smoked Paprika
  • 1 tbsp Salt
  • 1 tbsp Ground Black Pepper

Method

  • Place the country style ribs in a ziplock bag with the other ingredients and leave to marinate overnight or for 12 hours
  • When you are ready to smoke place oak wood pellets in the hopper and get your grills up to 225F or 107C
  • Smoke the ribs directly on the grills for around 2 hours
  • Remove the meat from the grills and wrap in tinfoil adding 4 tablespoons of water to the wrap under the ribs
  • Smoke for another 2 hours
  • Rest the ribs for 10 minutes or so and then serve with your sides and BBQ sauce

Z Grill Beef Ribs

These delicious beef ribs are smoked Texas style in your pellet smoker with a simple salt, pepper and garlic seasoning. They take around 6 hours altogether and really deliver on flavour.

You season the beef ribs with the salt, pepper and garlic rub, smoke them at 250F or 121C for 3 hours when the internal temperature reaches 170F (77C).

Then you wrap the ribs and smoke them for another 2 hours until the internal temperature is 205F (96C) and the meat is tender.

St Louis Ribs on Z Grill

St. Louis ribs are straighter and flatter than Baby Back ribs which are more curved. They also have more fat and meat content which makes them juicier and perfect for sharing.

This delicious Z grill ribs recipe only takes 4 hours cooking slow and low.

Ingredients

  • 3 St. Louis Style Rib Racks
  • 1 tbsp chilli powder
  • 2 tbsps brown sugar
  • 2 tsp smoked paprika
  • 1 tsp thyme
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp freshly ground black pepper
  • 1 1/2 cups of apple sauce
  • Your favourite BBQ sauce

Instructions

  • Make the rub by combining all the seasonings in a bowl
  • Dust the ribs all over with the rub and let the ribs sit for 1-4 hours
  • Get your pellet grill up to 225F or 107C (fill the hopper with hickory pellets)
  • Place the ribs directly on the grates bone side down and brush with apple juice
  • Cook for 1 hr then remove from the grill and wrap in a foil along with a splash of apple juice
  • Return to the grill and smoke for another 3 hours or so, until the internal temperature is 200°F or 93C
  • Remove from grill and foil, brush with BBQ sauce and return to the grill for a further 10 minutes.
  • Remove from the grill, allow to rest for 10 minutes, then serve with your choice of sides and BBQ sauce.
