Chicago Style Deep Dish Pizza

This is one of our favourite styles of pizza and the thick crust of this pizza pie is perfect for a cast iron pan.

You simply put a little olive oil in a circular cast iron pan and press around 250g of pizza dough into the pan. Don’t worry if it doesn’t reach the sides yet because it will rise until you can press the dough into the sides to build your crust.

While the dough is rising (around 30 minutes or so) you can make your pizza sauce and get the Ooni oven fired up to high heat.

Once the dough has risen you just need to push up the sides of the pan – depending on how big you want your crust to be you can push it up halfway or more to make for a bigger crust on your pie. Chicago pizza pies are traditionally served with the toppings first, then the cheese and then finally the pizza sauce over the top.

Cook your pizza in the Ooni oven on high heat for 15 minutes or so turning regularly for an even cook.

Ingredients

For the dough:

  • 1 KG Tipo 00 (We like Caputo 00 Flour)
  • 1 Teaspoon Dried Yeast
  • 600ml Warm Water (400ml Cold Water to 200ml Boiling Water)
  • 4 Teaspoons of Salt.

For the Pizza Sauce:

  • 1 tin good quality plum tomatoes.
  • 1 whole garlic clove
  • A handful basil leaves.
  • Optional – 1 teaspoon sugar

Blitz in a blender e.g. Nutribullet until smooth.

Ooni Cast Iron Skillet Steak Recipe

Steaks are meant to be seared at high heat which makes them perfect for cooking quickly in your Ooni oven. We used a Ooni cast iron skillet for this recipe but you can use a heatproof pan as well.

Get your Ooni oven up as high as it will go and preheat the skillet in the oven with the entrance closed. Season your steak with salt and pepper (or your favourite steakhouse style seasoning) and drizzle with a little olive oil or butter.

Place your steak onto the preheated skillet (it should be hot enough to sizzle) and then place it inside the Ooni oven.

For medium rare cook for 3-4 minutes a side and for medium to well 4-5 minutes a side.

Ooni Mac and Cheese Skillet Recipe

This really simple recipe for mac and cheese is a great illustration of what you can do with just a pan and your Ooni oven. It can be found on the Ooni website but we tried it out ourselves and fully recommend it.

Ingredients

  • 16 oz or 500g macaroni pasta
  • 6.7 oz or 192g whole milk
  • 2 eggs
  • 8 oz or 226g grated sharp cheddar
  • 8 oz or 226g grated Colby Jack or Gouda cheese
  • 1 stick or 110g melted butter
  • Salt to taste

Method

  • Cook the pasta in boiling according to pack instructions
  • Whisk the eggs, salt and milk together in a bowl
  • Add the cooked pasta to the bowl along with most of the cheese (save some for the top layer)
  • Preheat the skillet in the Ooni oven
  • Put all the ingredients in the preheated skillet and add the final layer of cheese
  • Cook in your Ooni oven for 5-10 minutes turning the skillet regularly for even cooking

Ooni Cast Iron Honey Garlic Salmon

This is another great recipe from Ooni themselves which is quick and easy but really delicious. Salmon fillets are perfect for cooking at high heat in a cast iron pan or skillet. The sauce is easy to prepare and you most likely have the ingredients in your cupboard already.

For the Honey Garlic Glaze

  • 2 tbsps of soy sauce
  • 1 tsp of cornstarch (cornflour)
  • 1 tbsp of honey
  • 1 tsp of hot sauce
  • 1 tsp of minced garlic
  • 1 tsp of minced ginger

In a small saucepan heat the glaze ingredients over medium until well combined.

For the Salmon

  • 2-4 salmon fillets
  • 1 tbsp of olive oil
  • 1 tbsp finely chopped spring onions
  • 1 tbsp of sesame seeds
  • Handful of finely chopped parsley

Get your Ooni oven up to high heat and preheat the cast iron skillet inside it.

Drizzle some olive oil over the salmon fillets and then place them in the preheated cast iron skillet. Cook the fillets for around 5 minutes in the Ooni oven.

Brush your cooked salmon fillets with the glaze. Serve with spring onions, parsley, and sesame seeds.

English Breakfast in the Ooni Recipe

If you heat up some oil in your Ooni in advance a breakfast fry up is an easy one pan wonder.

Simply just fry up some sausages, black and white pudding, bacon and fried bread and you’re good to go!

The Instagram video below is a slight variation on an English Breakfast – an Ulster Fry (which includes soda bread and potato bread instead of fried bread or toast) cooked in our Ooni oven.

Pork Chops in Cinnamon & Apple Sauce

Just like steaks, pork chops are perfect for cooking at high heat in your Ooni and they really take on wood-fired flavour well.

Just like before, you’ll to get your Ooni up to high heat (around 190C or 375F) and preheat the skillet.

Ingredients

  • olive oil for frying
  • 2 tsp of ground cinnamon
  • 1 tbsp of brown sugar
  • 1 tbsp of white wine vinegar
  • Salt & pepper
  • 2 bone in pork chops
  • 3 tbsp of unsalted butter
  • 2 quartered green apples
  • 3 sprigs of fresh thyme
  • 1 cinnamon stick
  • 200ml or 1 cup apple cider

Method

  • Mix 2 tablespoons of oil with the cinnamon, brown sugar, vinegar and salt and pepper in a bowl. Add the pork chops to this marinade and coat well.
  • Put a little olive oil in the cast iron pan and preheat it in the Ooni
  • When the pan is hot add the unsalted butter and then the pork chops
  • Cook for around 3 minutes a side turning over when the chops are golden brown
  • Add the quarted apples, thyme and cinnamon stick to the pan and then pour in the cider
  • Cook for another 3 minutes or so until the apples have caramelised
  • Remove from the oven, rest for 5 minutes in foil and serve

Cast Iron Goose Fat Roast Potatoes

While you probably wouldn’t think of roasting potatoes anywhere but in your conventional oven, you can get extra crispy roast potatoes by finishing them off at high heat in your Ooni oven in a cast iron skillet.

We need to take a slightly different approach with this recipe. You need to get your Ooni oven on to a low heat first – this is easy if you are using gas (you just set it to low) but requires a little bit more work if using wood. Consider using a charcoal bed and make sure you close the chimney baffle to restrict air flow and keep the flame low.

We want to aim for the pizza stone being around 250C or 482F. Place 70g of the goosefat in a cast iron skillet or pan and preheat the pan in the Ooni oven.

Next parboil the peeled and quartered potatoes in salted water for about 10 minutes. Once drained, place in a bowl with the olive oil and sea salt to taste.

Remove the cast iron skillet from the Ooni oven and place your potatoes onto the hot fat. Cook in the Ooni oven for around 15 minutes, turning the pan every 5 minutes or so for even cooking.

Now we want to increase the heat in the oven – if cooking with gas turn to the highest setting, and if you are using wood add more fuel, and remove the chimney baffle to allow more air flow.

Flip the potatoes over, spoon over the rest of the fat and add the garlic cloves and herbs. Cook for a further 10 minutes, turning the pan after 5 minutes. Keep cooking until the potatoes are crispy – increase the heat again if you have to.

The garlic and herbs get pretty charred so you may want to discard them before serving your extra crispy roast potatoes with your favourite main dish of choice.

  • 100 grams of goose fat (or duck fat)
  • 4 large quartered peeled Maris Piper potatoes
  • 2 tablespoons olive oil
  • flaked sea salt
  • 4 cloves garlic
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary

Can I use a Cast Iron Pan in my OONI?

Yes you can use a cast iron pan in your Ooni because it is heat-resistant and able to withstand the very high temperatures of a pizza oven.

Can you use Le Creuset in OONI?

According to Le Creuset themselves, the maximum oven-safe temperature for their cookware is 500°F or 260°C. An Ooni oven operates at temperatures much higher than this, so it wouldn’t be a good idea to use Le Creuset in your Ooni.

Can you Cook Things Other than Pizza in an OONI?

You can cook all sorts of things other than pizza in an Ooni oven. This includes foods such as breads, steaks, burgers, sausages, chicken, seafood, bacon as well as a whole lot more.

Can a Cast Iron Skillet go in a Pizza Oven?

A cast iron skillet can go into a pizza oven because cast iron is heat-resistant and can withstand high temperatures up to 1500°F or 816°C. Pizza ovens are hot but not as high as that!

Will Pizza Dough Stick to Cast Iron?

Pizza dough can stick to cast iron and the best way to prevent this is to put a layer of olive oil in the pan. The oil will prevent the dough sticking and also help the dough crisp up nicely.
