321 Method Pellet Grill Beef Ribs
If you haven’t heard of the 321 method for smoking ribs this is the process.
- Smoke the Ribs For 3 Hours at 225F
- Take the Ribs off and Wrap in Butcher’s Paper or foil and smoke another 2 hours
- Unwrap the ribs, put BBQ sauce on them and return to the smoker for another 1 hour
Although not everyone agress with the 321 method, it is a straightforward and effective method for beginners. Many BBQ pitmasters, such as Aaron Franklin also use this method.
Traeger Beef Ribs

It involves cooking your beef ribs slow and low at 225F over apple wood until the rib racks reach 205F internal temperature.

How Long to Smoke Beef Ribs on the Pellet Grill?
If you are smoking steadily at a temperature of 225F you can expect the cook to take around 6-8 hours.
If your smoker is at the slightly higher temperature of 250F the beef ribs will cook in around 5-7 hours.
As a result of the many variables during each smoke (the outside temperature, the size of your ribs etc), the only way to be sure your meat is done is to measure the internal temperature. The target temperature for beef ribs is 205F.
Use a meat probe at the thickest part of the meat to test this.
How Long to Grill Beef Ribs on the Pellet Grill?
If you want to grill Beef Ribs hot and fast at 275-325F it will take around 2-3 hours.
You will have to keep an eye on the ribs to make sure they don’t burn.
We would always recommend smoking beef ribs slow and low over indirect heat for the best texture and flavour.
A good way around this is to smoke the ribs low first for a couple of hours and then finish the ribs off at a higher temperature of 375-400F using the reverse sear method.
That way you get smoke flavour, a great sear and less cooking time.
